MUSTARD-COATED RIB ROAST WITH HORSERADISH SAUCE
Servings: 8 servings

1 4-6 lb. beef rib roast
- (bone-in), fat cover
- to 1/8-inch thick, trimmed
1 1/2 tbl paprika
1 tbl black peppercorns, crushed
1 tbl coase salt
1 tbl dried oregano, crumbled
1 tbl dried thyme, crumbled
2 tsp celery seeds
1 tsp cayenne pepper
2 tbl dijon mustard
2 tbl onion, grated
2 garlic cloves, pressed
----------- horseradish sauce ----------
1/2 cup radishes, grated
3 tbl prepared horseradish
2 tbl dijon mustard
1 tsp sugar
1/2 cup chilled whipping cream

Directions: mix first 7 dry ingredients in a small bowl. mix mustard, onion, and garlic in another small bowl. rub mustard mixture over meat. sprinkle the spice mixture over roast surface. cover and refrigerate for 2 hours before cooking. or, if time allows, for a "cured" flavor, let seasoned roast stand in refrigerator overnight before cooking. place roast, fat side up, on a rack in a shallow roasting pan in a 325 degree f oven for 2 1/4 hours or 26-30 min./lb. remove from oven when meat thermometer inserted in center, not touching bone or fat, registers 135 degrees f for med-rare or 150 degrees f for medium doneness. let roast stand tented with foil for 15 min. before carving. serve with horseradish sauce (recipe below). serves 8 to 12. horseradish sauce: mix grated radishes, horseradish, mustard and sugar in a small bowl. just before serving, pour radish mixture over whipped cream and fold together gently. serve with sliced beef roast. makes 2 cups. * cookfdn brings you this recipe with permission from: * texas beef council -- http://www.txbeef.org

In the dialogue "Crito," Socrates is faced with the proposal of esacpe from prison. In the following conversation he tries to establish whether an act like that would be just and morally justified, eventually concluding that by rejecting his sentence and trying to escape from prison he would be committing unjust and morally unjustified acts. In the end he decided to accpet his death penalty and execution.
Socrates did not come to this conclusion easily or without reasoning. His decision to escape from prison came through his hypothetical conversation with the law and constitution. Socrates reasoned taht lawbreaking is unjust, while observance of laws is just, because laws are just. He explained that any legal system is better than no legal system at all, and that a law must be based on correct reasoning and natural law, otherwise it is not a true and just law but actaully the misuse of a law. If the laws of Athens were not morally correct and if one could demonstrate their moral deficiency, then Socrates wouldhave the moral righ to reject the verdict, and his escape would not be an unjust act. THe suggestion of Athens' immoral laws made Socrates wonder if the laws were actually just. All citizens could freely leave Athens with no consequences, but if the citizen statyed it was then assumed that the citizen agreed with the existing laws. Since Socrates remained in Athens, and made no attempt to leave, it was assumed that he considered the laws just and the result of this was that a type of contract was created between the citizens and the laws.
